Hi Nancy - she could eat beans, lentils (well cooked & mashed), hemp milk, rice milk, almond milk, cashew, almond, tahini & hemp butters if she's not allergic to those nuts, hummus (http://www.savvyvegetarian.com/vegetarian-recipes/hummus.php - made with chick peas and tahini), quinoa, brown rice, oatmeal, millet, pasta, ground pumpkin, sunflower seeds or chia seeds (add to cereal or grains), avocado, banana, yams, butternut squash, potatoes. Try her with mung dhal veggie soup (http://www.savvyvegetarian.com/vegetarian-recipes/mung-dhal-vegetable-soup.php) - easy to make in the crockpot, freezes well, easy to digest). Lucky she's not allergic to wheat too!

Hey I’m not sure if you have a lot of healthy recipes of your own that you make, but if you do, you should send them into this contest I know of. I noticed your blog online and I think I have something you will be interested in. You could get great exposure for your recipes and meet celebrity cooks (Bobby Flay, Sunny Anderson, Sara Moulton, or Cat Cora). All you have to do is go to http://www.healthyfoodfight.com/ to submit one of your healthy recipes. It kicks off on September 4th at the Rockaway Mall in New Jersey. Thank you for your time and good luck with the competition if you decide to enter!

If you are concerned about your daughter's health, you might consider reading "The China Study" by T. Colin Campbell. It is an eye-opening account of how our Western diet is contributing to our ill health. I don't have children, but I know that if I did, I would base their nutrition on the information I learned from this book.

Hi Erica, please see the comment from Katie, 4/16/10 about getting snacks to fill in the gaps in the meal plan. You say you can't afford any extra food, but things like fruit, trail mix, granola, cereal bars, yogurt, carrot sticks, sunflower seeds, almonds won't break the bank and will help fill in those nutritional and calorie gaps. Also, discard your food likes & dislikes, and follow her suggestion about analyzing the dining hall offerings and picking the absolute most nutritious items they offer. E.G. ALL the veggies and fruit, esp. raw, ANYTHING whole grain, like whole grain bread or cereals, ANY carb that's not pasta or potatoes (like rice), ANY legumes, nuts or seeds (maybe in the salad bar). Most people gain weight in their first year at college. It's quite an achievement to lose 30 lb! I'm sure your parents don't want you to suffer from malnutrition, also common in college students, and would pay for a good vitamin supplement. Rainbow Light makes a good food based supplement for women.
