I've been trying to find recipes for vegetarian sausages, but can't seem to find any in all the book shops I've visited.
I'm probably looking at the wrong places, but I was hoping you could help me find all the different kinds of vegetarian (cheese included) sausages and their recipes.

You're also sure to find recipes for vegetarian sausage, if you search online. If not, you can add vegetarian sausages to almost any dish, such as pasta, soups and stews - just make it up - food is very flexible. Many non vegetarian cookbooks are more likely to have recipes including sausage, and you can just substitute vegetarian sausage for meat sausage.
There's a vegan cookbook with at least one recipe for vegetarian sausage: Vegan Brunch by Isa Chandra Moscovitz. This book tells you how to make them, as well.
Frankly, I don't know how to make veg sausage. I do know you can make approximations, from falafel mix, or a veggie burger recipe, and cook them in sausage shapes, but that may not be quite what you're after.
I'm not big on highly processed foods like commercial vegan sausage. Veg or not, they are high in sodium, and have lots of soy meal, one of the biggest sources of food allergies, hormone imbalances, digestive disturbances, and so on. as well.
Why not explore other sources of vegetarian protein? Like tofu, tempeh, beans, lentils, nuts, seeds, high protein grains like quinoa, etc? The SV report on Vegetarian Nutrition has a lot of helpful information.
