Quick Easy Recipe: Carrot Apple Walnut Salad

This sweet, crunchy salad is a big hit with both grown-ups & kids

Carrot Raisin Apple Walnut Salad

The tasty combination of tart chunks of apple, chewy raisins, crunchy walnuts, and sweet carrots in this salad is a big hit with both the grown-ups and the kids at our house.

Best of all, Carrot Apple Walnut Salad, also known as Waldorf Salad in days gone by, is a quick and easy recipe that the kids can get involved in making.

6 Servings: Serve immediately or chill before serving.


Ingredients:

  • 4 large carrots, peeled and coarsely grated
  • 1/2 cup chopped walnuts
  • 2 medium apples, cored and cubed
  • 1/2 cup raisins
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1/2 cup mayonaise (or veganaise)
  • 1/2 t salt
  • pepper

Directions:

Place all ingredients in a large bowl and stir until well mixed. Refrigerate until you are ready to serve.
