Vegan Chocolate Cupcake Recipe

Chocolate Cupcakes Ideal For Valentines Day or Birthdays

Light, fluffy and oh so chocolatey vegan chocolate cupcakes are perfect for school birthday parties, Valentine’s Day, random Mondays, your pet iguana’s birthday ... really, when is a chocolate cupcake ever a bad idea?

For a children's party, we like to make these with vanilla butter cream frosting, and cover them with sprinkles. For a Valentine's Day treat, you may prefer chocolate frosting - with or without sprinkles. Naturally, these cupcakes are also delicious plain.

Warning: When you make these chocolate cupcakes, be prepared for people to moan, “Oh my god these are so good!” over and over as they eat them. If anyone complains that they're not healthy, offer them an apple!

Cooking Tips: Best baked in paper cupcake liners. Wait until they're completely cool before icing them.

Makes 12 medium sized cupcakes

Ingredients:

  1. 1 1/3 cup unbl. white flour
  2. 1 1/4 cup white or unbl. wh. sugar
  3. 3/4 cup vegan margarine
  4. 1 Tbsp vanilla
  5. 2/3 cup unsweetened baking cocoa
  6. 1 1/2 tsp baking soda
  7. 2 Tbsp cornstarch
  8. 1/4 tsp salt
  9. 1 Tbsp egg replacer mixed with 1/3 cup water
  10. 2 Tbsp lemon juice mixed with:
  11. 1/2 cup plain almond milk
  12. 1/3 cup water

Cupcake Directions:

  1. Preheat oven to 350 degrees
  2. Line muffin tin with 12 paper cupcake liners
  3. Beat together egg replacer & water
  4. Mix flour, baking soda, cornstarch and salt in a small bowl and set aside
  5. Cream margarine with sugar
  6. Add vanilla, water, almond milk/lemon juice mixture, egg replacer, and beat until completely mixed
  7. Stir in dry ingredients until just mixed
  8. Spoon mixture evenly into prepared muffin cup liners
  9. Bake 15-20 minutes until a toothpick inserted into the center of a cupcake comes out clean
  10. Allow to cool completely before icing with 1/2 recipe of vanilla butter cream frosting
  11. Decorate with sprinkles if desired
