Citrus Pear Pomegranate Compote

Easy, Healthy, Fruit Salad Recipe

The contrast between the green mint sprigs and the red pomegranate seeds make this a perfect Christmas fruit salad. Combine the leftover syrup with sparkling water for a delicious beverage. This recipe requires you to poach the pears the night before.

Ingredients:

  • 6 ripe d’anjou pears
  • 4 cups of water
  • 1/2 cup sugar
  • 1 vanilla bean
  • 1 Tbsp lemon juice
  • Juice from 1 lime
  • Juice and zest from 1 lemon
  • 4 clementine oranges, peeled and sectioned
  • 1/2 pomegranate, seeded
  • 6 sprigs of fresh mint
  • Six small bowls

  • 1. Place water, sugar, vanilla bean, lime juice, lemon juice, and lemon zest in a large pot and bring to a boil, stirring to dissolve the sugar
  • 2. When the water has boiled turn heat to a low simmer
  • 3. Peel, quarter, and core the pears and place them immediately into the water so they don’t turn brown
  • 4. Simmer pears for 5 minutes and then remove them with a slotted spoon and place in a large bowl
  • 5. Strain the syrup and pour over the pears
  • 6. Add the vanilla bean
  • 7. Cover and chill overnight in the fridge
  • 8. To assemble the salad arrange 4 pear slices in each bowl
  • 9. Arrange an equal number of Clementine sections around the pears
  • 10. Sprinkle the pomegranate seeds over each salad
  • 11. Pour a small amount of syrup in each bowl
  • 12. Garnish each salad with a mint sprig
  • 13. Serve immediately
