Ingredients:

  • 15 - 20 button mushrooms
  • 1 small zucchini, chopped in small dice
  • 1/2 cup finely chopped onion
  • 1 piece bread, diced
  • 1/4 cup finely chopped cashews
  • 1 tsp vegan grated parmasan cheese OR: nutritional yeast

  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 4 Tbsp melted Earth Balance veggie spread

Directions:

  • Preheat oven to 350 degrees
  • Wash mushrooms and remove stems
  • Melt veggie spread

  • Add other ingredients and stir
  • Spoon stuffing into mushroom cavities
  • Bake uncovered for 15-20 minutes in a metal or glass baking dish pretty enough to go from oven to table
  • Serve immediately
