Mung Dhal Vegetable Soup: This crockpot soup recipe is delicious with cauliflower or carrot and green beans, or tomato or potato instead of yam, or butternut squash.
Barley Bean Veggie Soup: This hearty soup recipe makes a BIG pot of soup, perfect for feeding a crowd. It's great served with Oatmeal Currant Scones.
Quinoa Sweet Potato Black Bean Stew: Easy healthy quinoa recipe, hearty and spicy. It cooks in 30 minutes on the stove or just a few hours in a crockpot.
