Santiago's Salsa Fresca

Sure, we can live without salsa, just as we can live without love - but is it really living?

Santiago's Salsa Fresca is Real Live Salsa, as opposed to supermarket salsa. Two different universes.

Also known as 'pico de gallo', this salsa recipe is versatile as a topping for bruschetta, fajitas, soft tacos and avocado halves, and as a dip for veggies, jicama, crackers and chips.

Total Prep Time: 15 Minutes

Nutrition Data Per Serving, 47g: 11 cal, 1 fat cal, 3g carbs, 0g fat, 148mg sodium, 1g sugars, 1g fiber, 0g protein, very low Saturated Fat & Cholesterol, good source Thiamin, Vit. B6, Folate, Magnesium, Copper, Vit. K, Potassium, Manganese. Estimated glycemic load 1.

Ingredients:

  • 4 small Roma tomatoes, chopped (2 cups)
  • 1/2 cup red onion, diced
  • 2 Tbsp cilantro, minced
  • 2 Tbsp lime juice, fresh squeezed
  • 1 tsp jalapeño, seeded & minced
  • 1/2 tsp garlic, minced

  • 1/2 tsp sea salt, or to taste
  • 1/4 tsp black pepper, ground to taste
  • 1/4 tsp chili powder
  • 1/4 tsp cumin powder
  • Pinch cayenne pepper

Salsa Directions:

  1. Use organic ingredients, to get the full taste sensation.
  2. It takes about 15 minutes to make 2 1/2 cups of salsa, and about the same amount of time for 2 - 4 hungry people to devour, so make lots.
  3. Add ingredients to a large mixing bowl. Mix well.
  4. What could be simpler? Oh, yeah! Opening the chips and putting them in a bowl next to the salsa.
