I think the crockpot was invented by a vegetarian, it's so well suited to vegetarian recipes. The slow-cooker (or crock pot) is an inexpensive, indispensible kitchen tool for busy vegetarians or vegans. There really is no difference besides the name between a slow cooker or crockpot.
These vegetarian-vegan recipes can begin on the stove and finish in the slow cooker or crock pot. If you're in a big hurry, make them entirely on the stove top or oven. Or you can make them, freeze or refrigerate them, and heat them up in the slow cooker or crock pot.
The easiest way to use your slow cooker or crock pot for vegetarian recipes is just to throw everything in at once - grains, protein, veggies, water, oil, spices - cover and cook for 3 - 8 hours. If you need to reduce the cooking time, bring everything to a boil in another pan, while you preheat the crock pot, then throw it all in. It will then cook in 1 - 2 hours instead of up to 8 hours.
An appliance timer is very helpful for controlling the cooking time, as it will turn the crockpot on and off for you while you're not there. The only trick is setting the timer right - which can be quite a trick for the technologically challenged! Digital timers are the way to go.
Some recipes require other pots to be involved before they end up in the slow cooker or crock pot. Most one pot vegetarian recipes do in fact have several steps before everything is combined, and more than one implement. Those extra steps can enhance the flavor significantly. However you do it, slow cooker or crockpot recipes are simple and easy to make, serve and clean up after, lovely to look at, and satisfying to eat.
These vegetarian/vegan slow cooker recipes are great to take to a picnic or potluck. They can easily be expanded to a feast, by adding a salad, artisan bread, and fresh fruit or dessert.
