Sarah's Excellent Granola


Granola

From Savvy Vegetarian Kitchen
Makes approximately 8 cups

I didn't use to be a granola fan. I couldn't see the appeal in eating clumps of half cooked rolled oats with very dry raisins and stale nuts. Then my daughter Sarah started making her own granola. Now, I think that Sarah's Excellent Granola with a little yogurt is the ideal breakfast, or supper, take your pick. It's both divinely delicious and amazingly nutritious.

Ingredients:

  • 6 cups of rolled oats (not quick oats)
  • ½ cup walnuts chopped medium coarse
  • ½ cup almonds
  • ½ cup sunflower seeds
  • 1 t ground cinnamon
  • ½ cup mild flavored oil
  • 1 cup maple syrup
  • 1 T vanilla
  • ½ cup raisins
  • ½ cup chopped dates

Directions:

  1. Pre heat oven to 375
  2. Mix all ingredients except dried fruit in a large bowl
  3. Place uncooked granola in a very large cake pan or 2 smaller ones
  4. Stir thoroughly every 5 minutes - extremely important!
  5. Bake until oats are dry and golden in color
  6. Remove from oven and stir in dried fruit
  7. Stir occasionally to allow the steam to escape
  8. Allow to cool completely
  9. Store in an airtight container in a cool dry place.

Granola Variations:

  • Substitute other whole grain flakes like barley, wheat, etc. in place of part of the oats
  • Substitute other nuts for almonds or walnuts
  • Substitute other dried fruits for the raisins and dates, leaving out the cinnamon if it doesn’t go with the fruit you are using.

Helpful Hints:

  • Granola is a serious food. Lots of nutrition and lots of calories, so a little goes a long way.
  • Serve with yogurt and fresh fruit on top
  • Serve with cold or warm non-dairy beverage
  • Or serve however you like to eat your cereal! But if you come up with something especially tasty we’re counting on you to let us know!
