Carrot Apple Walnut Salad


Serves 6. The tasty combination of tart chunks of apple, chewy raisins, crunchy walnuts, and sweet carrots in this salad is a big hit with both the grown-ups and the kids at our house. Best of all it is quick and simple to make.

Ingredients:

  • 4 large carrots, peeled and coarsely grated
  • 1/2 cup chopped walnuts
  • 2 medium apples, cored and cubed
  • 1/2 cup raisins
  • 3 T. olive oil
  • 1 T fresh squeezed lemon juice
  • 2/3 cup mayonaise (or veganaise)
  • 1/2 t salt
  • pepper

Instructions:

Place all ingredients in a large bowl and stir until well mixed. Refrigerate until you are ready to serve.
