Greek Tofu SaladRecipe Courtesy of Veggie Revolution by Sally Kneidel, PhD, and Sara Kate KneidelServes 6. This is a visiting recipe that hasn't been tested by Savvy Vegetarian. It appears to be simple and sensible though. If I were making it, I would definitely bake the tofu, because it sounds good, and I don't do raw tofu. Also, a Tblsp Braggs Liquid Aminos or soy sauce would be a nice addition to the marinade - be sure to reduce the salt if you do that. Tofu Safety Note:Eating raw tofu straight up can cause food poisoning, depending on how it's packaged, transported, handled and stored.
