When I went vegetarian in the sixties, I had a hard time, because I had only the vaguest idea what to cook, or how to cook - never mind nutrition!
I ate lots of cheese, bread, brown rice, beans, a little bit of broccoli and carrots, the occasional apple - a very heavy, brown diet. I suffered for it.
I spent the next couple of decades learning what to eat and how to cook vegetarian, while I was a stay-at-home mom. I felt hard pressed at the time, but now I'm glad I was able to do that.
