Simple, Classic Guacamole from Savvy Vegetarian Kitchen
The four essential food groups:pesto, hummus, salsa, and guacamole. How could we live without them? Never eaten them, you say? Well! Your new life begins today!
This recipe makes about 2 cups of guacamole. Along with a bowl of corn chips, or burrito fixings, it will feed 2 - 4 guacamole enthusiasts.
Ingredients:
2 medium ripe but not mushy avocados
1 Tblsp fresh lemon juice
Salt and fresh ground pepper to taste
Optional:
1 Tblsp minced cilantro
Pinch cayenne pepper or chili powder
1 Tblsp fresh salsa
Instructions:
Half the avodacos, remove the stones, and scoop the avocado out of the shells with a spoon into a shallow bowl.
