Different brands of gf all purpose flour will absorb more or less moisture, which is why you might need to add a bit more milk or flour.
Xanthan Gum is an excellent binder but if you don't have it, add 2 Tbsp cornstarch or arrowroot starch. Use any vinegar if you don't have apple cider vinegar.
If you'd rather make these apple pancakes with regular wheat flour, use 1 1/4 cups whole wheat pastry flour or white spelt flour to replace gf mix and xanthan gum. Reduce the baking powder to 2 tsp.
To make ovo-lacto vegetarian pancakes, use dairy milk in place of non-dairy milk, and 2 eggs in place of the gr flax seed and 1/4 cup water.
The applesauce pancakes look really, really good & easy. I've been using part buckwheat flour and then putting in dried fruit, like raisins and cranberries (even tropical trail mix from the Dollar Store with pineapple, coconut, dates, bananas and papaya!)
