Since we weren't unplugged, I cooked my potatoes, and used frozen black beans which I thawed on the stove.
If you have them on hand, use fresh onion sautéed until soft, and fresh parsley. I didn't have breadcrumbs, so I used 1/2 cup quick oatmeal - it worked like a charm.
These tasty patties can be served with a variety of sauces. Spicy peanut sauce works great, and so does salsa or barbecue sauce. We used organic ketchup, preferred by discriminating children everywhere!
Robin's recipe says it makes 6 patties, but we stretched it out to a dozen smaller patties.
