My feelings about sandwiches are expressed perfectly in the song I Like Sandwiches, written by Bob King and performed by Canadian children’s singer Fred Penner.
My kids and I knew Fred Penner’s sandwich song by heart and sang it daily. When they’d ask what was for lunch, I’d belt out the chorus:
Sandwiches are beautiful, sandwiches are fine.
I like sandwiches, I eat them all the time;
I eat them for my supper and I eat them for my lunch;
If I had a hundred sandwiches, I’d eat them all at once.
30 years later, whenever I eat sandwiches, Fred Penner’s sandwich song repeats in my head - and sometimes out loud. But Fred sings it SO much better!

Burritos are a perfect veggie meal to serve when you’re busy or tired and everybody’s starving! You can have this meal-in-a-tortilla ready to eat in 20 minutes - or less.

3. Chickpea Salad Sandwich:
Enjoy yummy chickpea salad in sandwiches or as an easy appetizer or snack, with or without chips or crackers.

6. Hummus & Avocado Wrap:
Make with store bought wheat tortillas, or homemade gluten free flatbread We like to add pesto, avocado, lettuce, cucumber. Pickles, olives, veggie cheez shreds, or tomatoes are all excellent additions.
The only limitation to your creativity is being able to pick it up and eat it!

7. Quinoa Burgers:
Start with cooked quinoa for an easy veggie burger that’s ready in a jiffy. Make the burger mix ahead for really fast food, and try the gluten free option.
Make extra patties so you’ll have enough to freeze (cooked or uncooked) for later. Cold quinoa burgers make great sandwiches.

8. Tofu Burgers:
Tofu burgers are so quick, easy & kid friendly, they can’t be beat, and they’re a sure way to get anybody to happily eat tofu. They hold together well on the grill but should be brushed with oil before grilling.
Make this recipe gluten free by using gf oats and whole grain gf flour such as millet or amaranth and serve on gf buns.
