If like me, you have an ancient, low power food processor, you can make this recipe in an Ordinary Blender. I had to add more orange juice to make it work, and that was fine.
Since I wasn't sure if my blender would puree chopped cashews, I soaked them first. You could also grind dry cashews to powder in a spice grinder.
I used agave syrup instead of coconut nectar, adding an extra Tbsp. I also added another date. I skipped the vanilla bean and added extra vanilla instead. I also used toasted salted chopped cashews and sprinkled them on top with a bit of extra orange zest.
